RECIPE: Un-Canny Chicken Broccoli Pasta

Canned foods often get a bad rap, but they actually provide an affordable and convenient way to get all of your nutrients each day. You CAN eat healthy while on a budget, and we think this hearty recipe is the perfect option. 

Instructions

  1. Heat the oil in a large skillet over medium-high heat. When the oil is hot, put the chicken in the pan, and cook for 4 minutes. Stir the chicken, and cook for another 4 minutes or until heated through. Remove the chicken from the skillet.
  2. Reduce heat in the skillet to low and add the minced garlic and pepper flakes to the pan, cook for 30 seconds. Be careful not to burn the garlic. Add the pasta and the broth, increase the heat to medium-high, and bring to a boil. Reduce heat and cook, stirring frequently until the liquid thickens, about 12 minutes.
  3. Stir in the broccoli and chicken, and gently simmer until broccoli is tender, about 5 more minutes. Sprinkle the Parmesan cheese on top, and season with salt and pepper.
